Stir Fried Sesame Oil Chicken (炒麻油鸡)

1 lb chicken meat - chopped into pieces
1 small pc ginger - julienned
1 tsp dark soy sauce
2 tbsp soy sauce
2 tbsp water
2 tbsp sesame oil
1 tbsp cooking oil
  1. Heat up 1 tbsp cooking oil and 1 tbsp sesame oil in a wok over medium heat.  Stir fry the ginger until fragrant.
  2. Add chicken to the wok and stir fry over high heat for 1 minute.  Drizzle dark soy sauce and soy sauce over the chicken and stir fry to mix well.  Add water and cover.
  3. Switch to medium heat and let it cook for 10- 15 minutes, stirring occasionally.
  4. When the chicken is cooked, drizzle another 1 tbsp sesame oil before transferring to a serving plate.  Serve warm with rice.
