Fried Rice with Prawn and Italian Sausage

2 bowls cooked rice (left overnight)
4 italian sausages - cut into small pcs
10  prawns - peeled and deveined
3/4 bowl mixed peas
1 tsp minced garlic
2 tsp sliced shallot
1 tbsp minced red onion
2 tbsp soy sauce
1 tsp dark soy sauce
salt and pepper to taste
cooking oil
  1. Heat oil in a wok and saute the prawns and sausages until cooked.  Set aside.
  2. With the remaining oil, saute onion, shallots and garlic till fragrant. 
  3. Add cooked rice to the wok and stir fry under high heat for a few minutes.  Add soy sauce, dark soy sauce, salt and pepper.  Add mixed peas to the rice mixture and fry for another 2-3 mins.
  4. Transfer rice to a serving plate and serve warm.
