Minced Meat Porridge

serves 2 pax
1 cup rice
200 g minced pork meat
1 egg
2 pcs dried scallops
2 slices ginger
2 clove garlic - unpeeled
Seasonings for meat
1 tbsp soy sauce
1 tsp sesame oil
1 tsp sugar
salt and pepper to taste
1 tsp cornstarch

fried dough (you tiao)
cut green onion
fried shallot & shallot oil
  1. Bring a pot of water to a boil.  Add rice, dried scallop, ginger and garlic to the boiling water and cook under low heat for 45 mins to 1 hr, stirring occasionally to prevent rice grains from getting burnt.
  2. When porridge is cooked to desired consistency, add minced meat by teaspoonful and stir for a few minutes.  Add egg into the pot and stir to mix well.  Add salt and pepper to taste.
  3. Ladle porridge to a bowl and serve with fried dough, green onion, shallot and shallot oil.
