1 norwegian mackerel
salt and pepper to taste

cut red chilli in soy sauce

Grill Slow Cook Ribs with Chinese Spices

2 lb babyback ribs
1 tbsp dark soy sauce
2 tbsp light soy sauce
2 tbsp oyster sauce
2 tbsp ketchup
1 cup rice wine
1 tsp five spice powder
4 star anise
1 cinnamon
few slices ginger
half bulb garlic

  1. Put all ingredients inside a claypot.
  2. Cook on low heat for 6 hours or high heat for 3 hours, or until meat is tender.
  3. Preheat weber grill to 450 degrees F. Place ribs over indirect heat.
  4. Sprinkle sesame seeds on the ribs and grill for 10 to 15 minutes or till the ribs are caramelized.
  5. Remove from grille and enjoy the tasty fall off the bone ribs!  

Sea Cucumber and Clam Soup

1 packet freshly frozen sea cucumber - cleaned and blanched
1 packet frozen clams
1 pot chicken stock
handful of yuzhu
few slices ginger
2 cloves garlic
1 tbsp brandy
chopped parsley 
dash of pepper 
salt to taste
