Stir Fried Fish Fillet with Fermented Black Bean

1 lb swai fillet - cut into bite-sized pcs
8 pcs baby corn - sliced into halves
2 stalk celery - sliced
1 small tomato - cut into bite-sized pcs
1 small onion - sliced
1 tsp fermented black bean - chopped coarsely
1 tsp minced ginger
1 tsp minced garlic
salt and pepper to taste
1 tbsp cooking oil
1 tbsp soy sauce
1 tsp sesame oil
1 tsp huatiao wine
1 tsp cornstarch

  1. Marinate the fish slices for 1 hour or more.
  2. Heat up oil in a wok.  Saute the onion, ginger, garlic and black beans till fragrant.
  3. Add fish slices, tomato, celery and baby corn and stir fry to mix well.  Add salt and pepper to taste.  Transfer to serving plate and serve warm.
