Sweet potato with red bean dessert

1 sweet potato - peeled and cut into cubes
4 tbsp red beans - washed and soaked for 2 hours or more.
1 1/2 tbsp tapioca pearls
2 pandan leaves - knotted
1 tbsp rock sugar
5 cups water
  1. Bring water to a boil in a pot.  Add red beans, pandan leaves and sugar.  Cover and boil on low heat till red beans are softened.  Add sweet potato and tapioca pearls to the pot and bring to a boil.
  2. Cover and switch off heat.  The hot steam inside will continue to cook the ingredients. 
  3. Dessert will be ready in 30 mins to an hour's time.  Reheat and ladle into bowls and serve warm
