Broiled Salmon

Ingredients
1 lb salmon fillet
Marinade sauce

Marinade Sauce
1 cup dry sake
1/2 cup mirin (i replace with 1/2 cup sake and 1 tsp white sugar)
1/2 cup brown sugar
2 1/2 tbsp miso paste


Garlic Butter

ingredients
1 stick unsalted butter
3 cloves garlic - peeled and chopped finely
1 tsp dried basil leaves
1 tsp dried oregano leaves
1 tsp sea salt
1 tbsp olive oil

Purple Yam with Glutinous Rice Ball

ingredients
1 purple yam - peeled and cubed
4 glutinous rice balls
2 bowls of water
2 pandan leaves
rock sugar to taste

Claypot Goat Meat with Beancurd Stick


Ingredients
1 lb goat meat - chopped
2 pcs beancurd stick - break into large pcs, soak till soft and drain
1 carrot - peeled and chopped into big chunks  
3 cloves unpeeled garlic
few slices of ginger
1 tbsp rice wine
2 stalks green onion
cornstarch solution
3 - 4 cups water
1 tbsp cooking oil

Claypot Chicken with Chestnut

Ingredients
2 chicken wings - separate wings and drummette
2 chicken thigh - chopped into halves
1 large dried mushroom - soaked, drained and quartered
15 fresh chestnuts
few slices of ginger slices
2 cloves garlic - unpeeled and lightly mashed
1 shallot - peeled and sliced
2 stalks green onion - white part only
1 fresh red chilli - remove seeds and cut 
1 cup chicken stock or water
1 tsp sesame oil
cooking oil

Claypot Seafood with Pumpkin

Comfort food for the autumn season - my series of claypot dishes on the way....

Ingredients
1 medium-sized pumpkin (use 1/4 of it) - peeled, remove seeds and cut into large cubes
4 small slices of fish fillet
12 mussels - washed and cleaned
8 squid rings
6 prawns - peeled and deveined, with tail intact
1 cup chicken or vegetable broth
3 tbsp dessicated coconut
1/2 cup coconut milk
few slices of ginger
2 cloves garlic - unpeeled and lightly mashed
2 stalk lemongrass - white part only, lightly mashed
1 star anise 
1 tsp coriander seeds - lightly pound
1 tbsp soy sauce
1 tbsp oyster sauce
salt and pepper to taste
1 tbsp cooking oil

Prawn Fritters

Ingredients
200 g ( 1 1/2 cups) Plain Flour, sifted
1/2 tsp Baking Powder
1/4 tsp Ground Turmeric
1 level tsp Salt
250 ml (1 cup) Water
100 g (1/2 cup) Chinese Chives, trimmed and cut into 4 cm ( 1 1/2 inch) lengths
100 g (2 cups) Bean Sprouts, rinsed
20 Medium Prawns, peeled, with tails intact
Oil for frying

Steamed Pumpkin Rice


Ingredient

 1 cup rice
1 cup water 
1 bowl of cubed peeled pumpkin
1 tsp dried prawns - soaked and drained
1 chinese sausage - cut into small slices
1 small pc dried salted fish - diced
1 shitake mushroom - soaked, drained and diced
2 cloves garlic - chopped
1 shallot - chopped
2 tbsp soy sauce
salt and pepper to taste
