Braised Pork Rib with Pumpkin

1 lb pork ribs
400g pumpkin - peeled an cut into large cubes
3 cloves garlic - minced
1 tsp minced ginger
1 tsp sesame oil 
1 cup water.
vegetable oil

1 tbsp brown sugar
2 tbsp soy sauce
1 tbsp rice vinegar
1 tsp sesame oil

Bak Kwa (BBQ Pork Jerky)


Hubby's first attempt at making bak kwa.  A total success! Whoa....bak kwa during chinese new year in the states this time! So deliciously good that our friends swept every piece off the plate! And asking for more....where is my piece?
1 lb minced meat (with fat)
1 1/2 tbsp fish sauce
1/2 tbsp dark soy sauce
2 1/2 tbsp light soy sauce
1 1/2 tbsp rose wine (mei kuai lu)
1/2 cup sugar
8 pieces of ‘san zhar’ – ground up and add a tbsp of water to make into a paste
1/2  tsp of five-spice powder

Nappa Cabbage Mushroom Soup

small bunch nappa cabbage - cut into large pieces
10 white mushrooms - halved
6 prawns - peeled and deveined
2 slices of ginger
small piece of dried seaweed
1 pot vegetable stock or water

Fried Red Bean Pumpkin Pancake

200g pumpkin - peeled, sliced thinly, steamed and mashed
200 to 300g glutinous rice flour - estimated
sweetened red bean paste
sesame seeds
vegetable oil

Braised Pig's Trotters with Chestnuts

One of Hubby's fave dish.....
 8 pieces pig trotters
1 star anise
2 dried cloves

5 cloves garlic - light smashed
3 ginger slices
2 old ginger slices
2 dried shitake mushroom - soaked, drained and halved, reserve mushroom water
15 fresh chestnuts- blanched and peeled
6 dried chilli
1 tbsp rock sugar 
2 cups water estimated - inclusive of mushroom water
2 tbsp vegetable oil

Spicy Baked Breaded Chicken Drumsticks

6 chicken drumsticks - remove skin
1 tbsp soy sauce
3 cloves garlic - minced
1/2 tsp turmeric powder
1/2 tsp paprika
pinch of sugar
1/2 tsp salt 
1 tsp lime/lemon juice
1/3 tsp freshly ground black pepper
2 tbsp mayonnaise
panko bread crumbs for coating

CNY Vegetarian Lunch

First day of Lunar New Year Lunch
1 small bunch nappa cabbage
2 fresh shitake mushrooms
some fresh black fungus
dried lily bulbs - soaked, drained & knotted
fried beancurd stick - parboiled  to soften
dried black moss - soaked & drained
dried vermicelli - soaked & drained
some finely shredded ginger
1 tbsp soy sauce
2 tbsp oyster sauce
salt to taste
1-2 cups water
1 tbsp vegetable oil
