My ABC Soup/Luo Song Tang (罗宋汤)

Soup that is packed with Vitamins A, B, C and more.  Comfort food for a chilly night.....

300g pork ribs - blanched
2 large potatoes - peeled and cut into large cubes
2 medium tomatoes - quartered
2 carrots - peeled and cut into 2" length
3 stalks celery - cut into 2" length
1 small white onion - sliced
2 slices ginger
3 cloves garlic - unpeeled and light pounded.
10 to 12 bowls water
salt to taste
  1. Bring a pot of water to boil.  Add in the onion, ginger, garlic, pork ribs and half of the celery and simmer under medium low heat for 1 hour.  
  2. Add in potato, carrot and celery and bring to a boil again.  Simmer for another 20 mins.  Add in tomato and boil for 1 minute.  Add salt to taste.
  3. Ladle into a serving bowl and serve warm with rice.
