Pan Fried Prawns with Cereal

Serves 2 pax
Ingredients
1 packet Crispy Prawns with Cereal mix (use half of it)
8 large prawns
some curry leaves (i do not have them and substituted with thai basil leaves)
2 stalks chilli padi - chopped
salt and pepper to taste
1 tbsp unsalted butter
2 tbsp cooking oil

1/2 chicken (free range) - washed and cleaned
2 stalks green onion - cut into 3 parts
4 slices of ginger
4 cloves garlic - unpeeled and lightly smashed

one pot of water (enough to immerse the chicken)

Stir Fried Chicken with Fermented Black Bean

Ingredients
2 skinless chicken drumstick - deboned and cut into bite-sized pcs
1 cup of broccoli florets
5 stalks asparagus - ends trimmed and cut into 4 cm length
8 cherry tomatoes
2 slices ginger
1/4 onion - sliced
2 cloves garlic - chopped
1 tbsp fermented black beans - washed and roughly chopped
cornstarch solution
2 tbsp rice wine
4 tbsp water
2 tbsp cooking oil

Soy Sauce Braised Chicken (酱油鸡)

Ingredients
half chicken (free range) - washed and cleaned
4 eggs - boiled and peeled
1 block of fresh tofu - cut into large cubes
5 tbsp of rock sugar
2 star anise
1 stick cinnamon - about 4 cm
1 inch bulb old ginger - smashed
4 cloves garlic - unpeeled and smashed
2 stalks green onion - cut into 3 parts
1/2 tsp salt
11/2 cup water
2 tbsp cooking oil

Stir Fried Potato Wedges with Oyster Sauce

Ingredients
3 medium-sized potato - peeled and cut into wedges
1/2 cup frozen green peas - thawed
1 shallot - sliced
2 cloves garlic - chopped
salt and pepper to taste
1/4 cup water
2 tbsp cooking oil

Pineapple Fried Rice

Ingredients
3 cups cooked rice (left overnight in fridge)
10 medium-sized prawns - shelled, deveined and cut into halves
1 chinese sausage - diced
1/2 cup frozen green peas - thawed
3/4 cup pineapple chunks - cut from a fresh pineapple and reserve the shell
2 eggs
2 shallots - chopped
4 cloves garlic - chopped
3 tbsp fish sauce
2 tbsp soy sauce
11/2 tbsp curry powder
salt and pepper to taste
3 tbsp cooking oil

Bittergourd with Minced Meat Soup

Ingredients
1 bittergourd - cut lengthwise into halves, de-seeded and sliced thinly.
1 tomato - quartered
150 g minced meat
1 egg
2 clove garlic - unpeeled and smashed
2 slices ginger
salt and pepper to taste
1 small pot of water

Char Kway Teow

serves 2-3 pax
Ingredients
250g fresh flat rice noodles (kway teow) - loosen strands and use hot water to rinse, drained
180g fresh yellow noodles - loosen strands and use hot water to rinse, then drained.
1 chinese sausage - sliced thinly
1 fish cake - sliced thinly
1 squid tail - cut into 1 inch length
1/8 cup fresh shelled cockles (i do not have them, i substituted with canned shelled clams)
2 eggs
handful of beansprouts - ends trimmed
2 stalks green onions - cut into 4cm length
4 cloves garlic - chopped
1 tbsp sambal belachan
4 tbsp water
5 tbsp cooking oil
