Blueberry Jam

Steamed Taro with Chinese Sausage


Ingredients
1 medium-sized yam - peeled
1 chinese sausage
1 liver sausage
1 tbsp rice wine
drizzle sesame oil
3/4 cup coconut milk
handful of wolfberreis
salt to taste 
1 tbsp of chopped green onion

Sour Plum Sauce (酸梅酱)


Ingredients
one large bowl sour plum
3 tbsp salt
1 big piece rock sugar
sugar to taste

Grilled Lemongrass Chicken


Ingredients
6 pieces chicken drumstick
2 stalk lemongrass - use white part only - chopped finely
3 shallots- peeled and sliced
3 cloves garlic - peeled and sliced
1 1/2 tbsp fish sauce
1 1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp lemon juice
1 tbsp mirin
2 tbsp brown sugar 
dash of black pepper

Cherry Plum Jam


Ingredients
70 - 80 cherry plum - washed and pitted
1-2 cup sugar or as preferred
sprinkle of ground cinnamon
water as needed

Braised Chicken with Garlic and Spices

Ingredients
5 chicken drumsticks or thighs
11/4 cup chicken stock or water
1 tbsp Thai fish sauce
2 tbsp smooth peanut butter
1 slice old ginger
4 garlic cloves, chopped
4 shallots, chopped 
2 small red chillies, seeded and chopped
1 lemongrass stalk, finely chopped
2 tbsp chopped fresh cilantro
1 tsp shrimp paste
1/2 tsp ground cinnamon
1 tbsp tamarind paste
2 tbsp vegetable oil
salt and pepper to taste
4-5 tbsp toasted peanut, chopped

Dong Po Rou (东坡肉)




Ingredients
1.5 lb pork belly
4 stalks green onion
5 slices ginger
3/4 cup rock sugar
3/4 cup soy sauce
1 tsp dark soy sauce 
1 1/2 cup rice wine
water to cover pork belly
2 pc star anise
1 pc cinnamon stick 
3 tbsp vegetable oil
