Ingredients
4 chicken leg quarters
few slices of ginger
1 stalk green onion
Seasoning for chicken(Part A)
4 star anise - crushed
3 tbsp red peppercorn - crushed
1 tsp five spiced powder
2 tbsp huatiao wine
1 tbsp black peppercorn - crushed
1 tsp salt
2 stalk green onion - cut into halves and smashed
Seasoning for following day (Part B)
2 tbsp dark soy sauce
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp five spice powder
1 tbsp honey
Ingredients for smoking chicken (Part C)
6 tbsp flour
4 tbsp brown sugar
4 tbsp rice grain
6 tbsp black tea leaves
Method
- Marinate chicken with seasoning (Part A) overnight in the fridge..
- Steam over medium high heat for 15 minutes the following day.
- Rub seasoning (Part B) on steamed chicken. Let chicken dry up slightly before smoking.
- Heat up weber grill on medium heat. Place a large sheet of aluminium foil on the grill. Place smoking ingredients on top of the foil. Place a trivet on top of the smoking ingredients. Place chicken on the trivet and smoke for 40 minutes at 300 degree F.
