Chinese Style Smoked Chicken Leg Quarters (茶熏鸡 l 烟熏鸡)





Ingredients
4 chicken leg quarters
few slices of ginger
1 stalk green onion

Seasoning for chicken(Part A) 
4 star anise - crushed
3 tbsp red peppercorn - crushed
1 tsp five spiced powder
2 tbsp huatiao wine
1 tbsp black peppercorn - crushed
1 tsp salt
2 stalk green onion - cut into halves and smashed

Seasoning for following day (Part B)
2 tbsp dark soy sauce
2 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp five spice powder
1 tbsp honey

Ingredients for smoking chicken (Part C)
6 tbsp flour
4 tbsp brown sugar
4 tbsp rice grain
6 tbsp black tea leaves

Method 
  1. Marinate chicken with seasoning (Part A) overnight in the fridge..
  2. Steam over medium high heat for 15 minutes the following day.
  3. Rub seasoning (Part B) on steamed chicken. Let chicken dry up slightly before smoking.
  4. Heat up weber grill on medium heat.  Place a large sheet of aluminium foil on the grill.  Place smoking ingredients on top of the foil.  Place a trivet on top of the smoking ingredients.  Place chicken on the trivet and smoke for 40 minutes at 300 degree F.
