Ingredients
1 lb pork ribs
1 chinese squash - cut into thick slices
1 bunch of leek - cut into big slices
few slices of ginger
2 cloves garlic - peeled
1 tbsp vegetable oil
1 cup chicken stock or water
Seasonings for pork ribs
1 tbsp soy sauce
1 tbsp rice wine
1dash of pepper
pinch of salt
1 tsp cornstarch
Method
- Marinate pork ribs with seasonings for 1 hour or more.
- Heat up oil in a pot. Saute ginger slices and garlic till aromatic.
- Add pork ribs and do a quick stir fry over high heat.
- Add chicken stock or water and cook for 30 minutes or more till pork ribs are tender.
- Add cut chinese squash and leek. Continue to cook for 15 minutes.
- Transfer to a serving bowl and serve warm with rice.
