Braised Pork Rib with Leek and Chinese Squash





Ingredients
1 lb pork ribs 
1 chinese squash - cut into thick slices
1 bunch of leek - cut into big slices
few slices of ginger
2 cloves garlic - peeled
1 tbsp vegetable oil
1 cup chicken stock or water

 Seasonings for pork ribs
1 tbsp soy sauce
1 tbsp rice wine
1dash of pepper
pinch of salt
1 tsp cornstarch

Method
  1. Marinate pork ribs with seasonings for 1 hour or more.
  2. Heat up oil in a pot.  Saute ginger slices and garlic till aromatic.
  3. Add pork ribs and do a quick stir fry over high heat.
  4. Add chicken stock or water and cook for 30 minutes or more till pork ribs are tender.
  5. Add cut chinese squash and leek.  Continue to cook for 15 minutes.
  6. Transfer to a serving bowl and serve warm with rice.
