Bittergourd Fish Maw Tofu Soup



Ingredients
1 small bittergourd
1 large tomato
1 large piece of dried fish maw
1 packet soft tofu - cut into large pieces
1 stalk green onion
2 slices of ginger
2 cloves garlic - unpeeled
1 medium pot chicken stock
salt and white pepper to taste

 Method
  1. Wash and slice the bittergourd into halves horizontally.  Remove pith and seeds.  Cut into thin slices.  
  2. Cut tomato into small pieces.
  3. Soak fish maw in water till soft.  Bring a pot of water of water to boil.  Add in 1 stalk of green onion.  Add soaked fish msw and boil for a few minutes to get rid of any fishy smell.  Drain of excess water and cut ithe fish maw into large pieces.
  4. Bring a pot of water to boil.  Add fish maw, bittergourd, tomato slices, ginger and garlic and cook for 20 minutes over medium heat.
  5. Add cut tofu and continue to cook for another 5 minutes.
  6. Add salt and pepper to taste.  Ladle into a serving bowl and serve warm.
