Ingredients
1 small bittergourd
1 large tomato
1 large piece of dried fish maw
1 packet soft tofu - cut into large pieces
1 stalk green onion
2 slices of ginger
2 cloves garlic - unpeeled
1 medium pot chicken stock
salt and white pepper to taste
Method
- Wash and slice the bittergourd into halves horizontally. Remove pith and seeds. Cut into thin slices.
- Cut tomato into small pieces.
- Soak fish maw in water till soft. Bring a pot of water of water to boil. Add in 1 stalk of green onion. Add soaked fish msw and boil for a few minutes to get rid of any fishy smell. Drain of excess water and cut ithe fish maw into large pieces.
- Bring a pot of water to boil. Add fish maw, bittergourd, tomato slices, ginger and garlic and cook for 20 minutes over medium heat.
- Add cut tofu and continue to cook for another 5 minutes.
- Add salt and pepper to taste. Ladle into a serving bowl and serve warm.
