Steamed Oysters with Ginger and Scallions

Waiting for my chef to prepare these delectable appetizer.
After shucking the oysters and adding the toppings
Steaming these big fat juicy oysters.
All steamed and ready to be devoured!
Fresher and tastier than the restaurant served oysters!

Ingredients
10 fresh oysters
1 tbsp light soy sauce
1 tbsp rice wine
1 tbsp minced ginger
sprinkle of chopped scallions or green onion

Method
  1. Scrub the oysters to remove any mud and grit.  Rinse with cold, running water.  Throw away any oysters with broken shells or those which have opened.
  2. Shuck the oysters.  Add the toppings.  Steam for 5 to 8 minutes on high heat, depending on the size of the oysters.  Remove from steamer when oysters are just cooked, looking soft and fleshy.
  3. Dig into these delectable morsels of briny goodness immediately!
