Pumpkin and Sunflower Seed Bread







Ingredients
1 cup water 
1 package yeast
2 tbsp oil
1 tsp salt
3 cups unbleached whole wheat flour
1/3 cup pumpkin seeds
1/3 cup sunflower seeds
1/8 cup white sesame seeds

Toppings
1 egg white
1 tbsp water
sprinkle of pumpkin seeds
sprinkle of sunflower seeds
sprinkle of sesame seeds

Method
  1. Add yeast to a cup of warm water.  Add sugar.  stir and let it rest for 5 minutes or until it is foaming. Pour yeast mixture into a large bowl.  Add in salt and oil.
  2. Pour flour into the bowl and stir, adding 1 cup at a time.  Once 2 cups of flour are mixed with the liquid, slowly add in the fjour 1/2 cup at a time until a ball is formed and the dough is not sticky.
  3. Place kneaded dough in a well oiled bowl.  Cover dough with a damp cloth and let the dough rise until doubled in size, about 1 hour. 
  4. Remove cloth and gently punch dough down so it is deflated.
  5. Add seeds onto the dough and knead to form into a ball.  Shape ball into a rectangular shape and place in a greased loaf pan.
  6. Cover loaf and let rise for another 30 minutes.
  7. Brush with egg wash and sprinkle with seeds.
  8. Bake for 40 to 45 minutes in a 350 degree oven.
  9. Allow bread to cool for 10 minutes and then remove from pan.
  10. When it fully cooled, cut bread into slices and enjoy freshly baked bread with a bowl of clam chowder or any soup you desire!
