Claypot Chinese Sausage and Cured Meat Rice/ Lap Mei Fan (腊味饭)








Another delish one pot meal by the hub.  Few ingredients yet full of of fiavours!

Ingredients
1 1/2 cup of rice
1 13/4 cup of water
2 pieces of chinese sausage (lap cheong)
4 inches chinese cured meat (la rou)
5 cloves garlic - peeled and lightly smashed 
one small bunch of broccoli - cut into florets
Seasonings
2 tbsp or more dark caramel sauce (kecap manis) 
1 tsp shallot oil

Method
  1. Lightly oil a claypot.  Rinse rice and add into claypot.  Add water and cook on medium heat.  
  2. While the rice is cooking, cut the cured meat and sausage into thin slices.
  3. When rice is bubbly and water is almost absorbed, switch to low fire.
  4. Add sliced cured meat and sausage to the claypot.  Cover and continue to cook for another 15 minutes.  Add broccoli and let it cook for another few minutes.
  5. Remove from heat and drizzle kecap manis and shallot oil.
  6. Mix everything together to incorporate all the fabulous flavours of the ingredients.
  7. Time to dig into this aromatic and super tasty pot of rice!
