Grilled Salmon Fillet with Spice Rice






Ingredients
fresh wild salmon fillet
salt and pepper to taste

Spice Rice
1 cup of basmati rice
2 cups of water
1 tbsp coconut oil
1 slice of hutter
1 tbsp turmeric powder
2 tbsp diced onion
1 cardamon pod
10 curry leaves
3 cloves
1 star anise
Method
  1. Marinate salmon with some salt and pepper.  Rub a little oil on the fillet.  Set aside.
  2. Meanwhile prepare to cook the rice.  Rinse one cup of basmatic rice.  Add 2 cup of water.  Set aside.
  3. Heat up oil in a pan.  Fry onion till aromatic.  Add curry leaves, cardamon pod, cloves and star anise.  Fry for another few minutes over low heat.
  4. Pour spice mix into the rice cooker.  Add turmeric powder and butter and cook the rice.
  5. When rice is ready, heat up the grill on high.
  6. Place salmon fillet on the grill and cook for a few minutes on each side.
  7. Serve grilled salmon with the spice rice and enjoy the delicious meal!
