Ingredients
fresh wild salmon fillet
salt and pepper to taste
Spice Rice
1 cup of basmati rice
2 cups of water
1 tbsp coconut oil
1 slice of hutter
1 tbsp turmeric powder
2 tbsp diced onion
1 cardamon pod
10 curry leaves
3 cloves
1 star anise
- Marinate salmon with some salt and pepper. Rub a little oil on the fillet. Set aside.
- Meanwhile prepare to cook the rice. Rinse one cup of basmatic rice. Add 2 cup of water. Set aside.
- Heat up oil in a pan. Fry onion till aromatic. Add curry leaves, cardamon pod, cloves and star anise. Fry for another few minutes over low heat.
- Pour spice mix into the rice cooker. Add turmeric powder and butter and cook the rice.
- When rice is ready, heat up the grill on high.
- Place salmon fillet on the grill and cook for a few minutes on each side.
- Serve grilled salmon with the spice rice and enjoy the delicious meal!
