Vegetarian Braised Dried Beancurd Sheet with Broccoli Mix




Ingredients
1 broccoli crown - separate into florets
some carrot slices
1 large dried shitake mushroom - washed, soaked and drained, reserve soaking water.
1 piece black fungus - soaked until soft and drained.  Trim off hard part and cut into pieces
few sheets of dried beancurd sticks - blanched in boiling water and drained, cut into large pieces
1 tbsp soy sauce
1 tbsp vegetarian oyster sauce
dash of sesame oil
a little sugar to taste

Method
  1. Heat up a pot of boiling water.  Blanch the broccoli for a few minutes and drain.  Set aside.
  2. Heat up oil in a frying pan.  Add black fungus and sliced mushroom and fry for a while.  Add soy sauce and vegetarian oyster sauce.  Fry to mix well.  
  3. Add beancurd sheets and carrot slices.  Add mushroom water and sugar.  Cover and cook for a few minutes.
  4. Remove cover and add a dash of sesame oil.  Toss to mix well.
  5. Ladle into a serving plate and arrange broccoli around the mixture.
  6. A simple and tasty vegetarain meal prepared by the hub!
