Winter Melon Soup with Pork Ribs (冬瓜排骨汤)

200g pork ribs - blanched in boiling water and drained
1/4 of a winter melon - peeled, deseeded and cut into cubes
10 red dates (i ran out of them)
2 slices of ginger
1 small dried cuttlefish
2 dried scallops
salt to taste
1/2 pot of water

  1. Bring the pot of water to boil.  Add ginger slices, dried cuttlefish, dried scallops, red dates and pork ribs and simmer over medium heat for 45 minutes.
  2. Add winter melon cubes and continue to simmer for another 15 minutes.  Add a little salt to taste.
  3. Ladle into a serving bowl and serve hot with rice.
