Stir Fried French Beans (炒四季豆)

150 to 200 g french beans - remove tips and sliced diagonally
2 tbsp dried prawns (soaked in water and drained)
3 cloves garlic - sliced
pinch of salt
1 tbsp soy sauce
2 tbsp water
2 tbsp vegetable oil

  1. Heat up oil in a wok.  Fry the dried prawns and garlic till fragrant.
  2. Add french beans, cover and stir fry over high heat for 1 minute, stirring once.
  3. Remove cover, add salt, soy sauce and water and fry for another 1-2 minutes.  If it is too dry, add a bit more water.
  4. Transfer to a serving plate and serve warm with rice or porridge.
