Prawns in Tomato Sauce

15 medium-sized prawns - trimmed, deveined and washed
1 small onion - sliced
3 cloves garlic - chopped
1 tomato - diced
20 sweet basil leaves
salt and pepper for seasoning
2 tbsp vegetable oil

5 tbsp ketchup
1 tbsp sugar
1 tbsp rice wine
3 tbsp water
salt to taste

  1. Season the prawns with a little salt and pepper.  Heat oil in a pan and pan fry the prawns till almost cooked.  Remove and set aside.
  2. With the remaining oil, fry the onion and garlic till fragrant.  Add diced tomato and basil leaves and continue to stir fry for another 1- 2 minutes.  Add the sauce and stir to mix well.
  3. Add prawns and toss to coat well with the sauce.  Cook for another minute.
  4. Transfer to a serving plate and serve warm.
