Satay Peanut Sauce

leftover marinade from satay
4 tbsp chilli oil
3 tbsp peanut butter
1/2 cup coconut milk
salt to taste
1/4 cup roasted peanuts (roughly chopped)

  1. Heat up oil in a small pot and fry the leftover marinade.
  2. Add 2 tbsp peanut butter and coconut milk and simmer for a few minutes.
  3. Add salt to taste.  Add some roasted peanuts into the sauce and mix well.
  4. Ladle into a small bowl and serve as dipping sauce for satay.
