Stir Fried Chow Mein

Ingredients
Half a packet chow mein (Guang dong noodles)
1 small piece of pork - cut into thin slices
3 tbsp of cooked small shrimps
4 dried mushrooms - soaked and cut thinly
1 carrot - peeled and julienned
1/2 cup shredded cabbage
3 eggs - pan fried and cut into strips
2 slices ginger
3 garlic cloves - chopped
1/2 small onion - sliced
2 stalks green onion - cut into 3cm length (white part only)
water
1 tbsp sesame oil
2 tbsp cooking oil
some toasted sesame seeds

Sauce
2 tbsp soy sauce
1 tsp dark soy sauce
1 tbsp fish sauce
1 tbsp oyster sauce
salt and pepper to taste


Method
  1. Cook the chow mein according to the package instructions.  Add sesame oil and toss to mix them evenly and to prevent them from sticking together.
  2. Heat up oil in a wok over medium heat.  Fry the ginger, onion,. garlic and green onion till fragrant. 
  3. Add pork, shrimps and mushrooms and fry till pork is almost cooked.  Add cabbage, carrot and sauce and fry for another 1- 2 minutes.
  4. Add the cooked chow mein and enough water to mix with all the ingredients.
  5. Transfer to a serving plate and top with the fried egg and some toasted sesame seeds.
