Muffin with almond toppings

Ingredients
Dry ingredients
2 cups all purpose flour
3/4 cup sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon

Wet ingredients
2 eggs
3/4 stick butter
1/4 cup oil
1/2 cup milk
1 tsp vanilla extract

Toppings
sliced almonds

Method
  1. In a large bowl, cream butter and sugar until light and fluffy.  Add egg, one at a time and beat until incorporated into the mixture. Add in oil, milk and vanilla extract.  Use a spatula to mix well.
  2. Preheat oven to 350 degrees F.
  3. Grease baking pan with butter.
  4. Boil the raisins for one minute and let stand for 10 minutes.
  5. Drain away the water.  Set aside.
  6. Separate the dry and wet ingredients into 2 bowls.
  7. Mix them up in their own bowls.
  8. Combine them by pouring the dry ingredients into the wet ingredients.
  9. Stir in the raisins.
  10. Pour batter into muffin pan and bake 20 minutes till brown with crispy edges.
  11. When done, let cool and put them on cooling rack.
