Daikon Pork Rib Soup

250g pork ribs - blanched in boiling water and drained
1 daikon- peeled and cut into cubes
10 red dates
3 shitake mushrooms - soaked and drained
2 slices of ginger
1 small dried cuttlefish
salt to taste
1 pot of water

  1. Bring the pot of water to boil.  Add ginger slices, dried cuttlefish, mushrooms, red dates and pork ribs and simmer over medium heat for 45 minutes.
  2. Add daikon cubes and continue to simmer for another 20 minutes.  Add salt to taste.
  3. Ladle into a serving bowl and serve hot with rice.
