Manila Clam Soup

1 fuzzy melon (mo gua) - peeled and cut into big cubes
20 manila clams
1 pot chicken broth
12 pcs straw mushrooms
1 tomato - quartered
2 slices ginger
salt and pepper to taste

  1. Bring the chicken broth to a boil.  Add in ginger slices, fuzzy melon, straw mushrooms and tomatoes and continue to boil for 15 mins under medium heat.
  2. Add in manila clams and let cook for 3 to 5 mins or until all clams are open.
  3. Add salt and pepper to taste.  Serve immediately.
