Halibut in Lemongrass Curry Sauce

Ingredients
1 lb halibut steak
1 tomato -cut into quarters
4 pcs tofu puff -blanced in hot water and squeezed dry
2 stalks lemongrass (white part only) - pound with back of knife
4 dried chillies
1 tsp minced ginger
1 tsp minced shallot
1 tbsp thai red curry paste
1/2 can thick coconut milk
2 tsp cooking oil
Method
  1. Heat up cooking oil in pan.  Saute the ginger, shallot, dried chillies and lemongrass till fragrant.  Add curry paste and stir fry for a while.  Add coconut milk and bring to a boil.
  2. Place halibut steak, tofu puff and tomato into the curry sauce. 
  3. Cover and cook under medium heat for 10 to 15 mins or until fish cooked through.  Serve hot with rice.
