A variety of organic homegrown tomatoes from Hub's colleague
Ingredients
1 lb cod fish fillet
salt and pepper to taste
some tomatoes - cut into large pieces
half of a small white onion - peeled and sliced
1 tsp chopped garlic
few slices of ginger - julienned
olive oil
Sauce
1 tbsp soy sauce
1 tbsp rice wine
Method
- Marinate fish with salt and pepper for 30 minutes or more.
- Heat up oil in pan. Pan fry ginger till brown. Set aside on a plate.
- Add a little more oil and pan fry the fish on both sides for about 5 minutes on each side.
- Place fish on a serving plate.
- Add a little more oil and fry the onion for a while. Add garlic and fry till lightly aromatic. Add tomatoes and drizzle sauce. Fry to mix well.
- Pour mixture on the plate. Place fried ginger on top of the fish and serve warm with rice.
