Pan Fried Cod Fish Fillet with Tomatoes


A variety of organic homegrown tomatoes from Hub's colleague


Ingredients
1 lb cod fish fillet
salt and pepper to taste
some tomatoes - cut into large pieces
half of a small white onion - peeled and sliced
1 tsp chopped garlic
few slices of ginger - julienned
olive oil

Sauce
1 tbsp soy sauce
1 tbsp rice wine

Method
  1. Marinate fish with salt and pepper for 30 minutes or more.
  2. Heat up oil in pan.  Pan fry ginger till brown.  Set aside on a plate.
  3. Add a little more oil and pan fry the fish on both sides for about 5 minutes on each side.
  4. Place fish on a serving plate.
  5. Add a little more oil and fry the onion for a while.  Add garlic and fry till lightly aromatic.  Add tomatoes and drizzle sauce.  Fry to mix well.
  6. Pour mixture on the plate.  Place fried ginger on top of the fish and serve warm with rice.
