Claypot Fish with Zucchini and Spicy Korean Bean Paste




Ingredients
1 lb halibut fish meat
1/4 portion of a large zucchini - peeled and cut into 2 inch length
2 tbsp spicy korean bean paste
2 slices ginger
2 cloves garlic - chopped
8 fried tofu puff
1 stalk of green onion - ends trimmed and cut into 2 inch length 
salt and pepper to taste

 Method
  1. Marinate fish with some salt and pepper for 30 minutes or more.
  2. Heat up oil in a claypot.  Fry ginger and garlic till aromatic.  Add korean bean paste and continue to fry for a while.  
  3. Add zucchini and tofu puff.  Add water and cover to cook for 10 minutes.
  4. Heat up grill on high and lightly grill the fish meat on both sides.
  5. Add grilled fish to the claypot and cook for another 5 to 10 minutes or until fish is just cooked through.  Add salt to taste.
  6. Serve warm with rice.
