Braised Pork Rib with Zucchini





Beautiful home grown zucchini which are organic, large and sweet.  Good to have a very nice neighbour who shared her bounty with us!





Ingredients
1 lb pork ribs - cleaned
a section of a large zucchini - peeled, pith and seeds removed and cut into 2 inch length
few slices ginger
2 cloves garlic - chopped
1 tbsp cooking oil
water as needed

 Seasoning for pork ribs
1 tbsp rice wine
1 tbsp soy sauce
dash of salt and pepper

Sauce
1 tbsp fish sauce
1 tbsp oyster sauce
1 tsp sesame oil

Method
  1. Marinate pork ribs with seasonings for 1 hour or more.
  2. Heat up oil in pot.  Fry ginger and garlic till aromatic.  Add pork ribs and sauce and stir fry over high heat.  Add water.  Cover and cook over medium low heat for 30 minutes.
  3. Add zucchini and cook for another 5 minutes or till zucchini is tender. 
  4. Add salt and pepper to taste.
  5. Serve warm with rice.
