French Bean Omelette




Ingredients
1 bunch of french bean - ends trimmed and sliced into 2 cm length
3 eggs - lightly beaten with 1 tbsp soy sauce and dash of pepper
2 tbsp dried shrimp skin
3 cloves garlic - peeled and minced
1 to 2 tbsp cooking oil
salt to taste

Method
  1. Heat up oil in pan.  Fry garlic till lightly aromatic.  Add cut beans and a dash of salt and fry till tender.
  2. Pour egg mixture over the beans.  Lightly spread the egg mixture to coat the beans.
  3. Cook for a few minutes or until the bottom layer is set and nicely browned.  
  4. Flip over to the other side and do the same.
  5. Serve warm with rice or porridge.
