Chewy Sweet Potato Balls



Ingredients
1 medium sized sweet potato - peeled
tapioca starch
water for kneading
3 cups water
2 tbsp quinoa
8 red dates
2 slices ginger
sugar to taste

 Method
  1. Add 3 cups of water to a pot.  Add red dates and quinoa and boil over medium heat for 10 minutes.
  2. Cut the sweet potato into thin slices.  Steam over high heat till soft.  Add 1 tbsp sugar and mashed the sweet potato.  Set aside.
  3. When slightly cooled, add tapioca starch and water in small portions until a pliable dough is formed. More starch will add to the chewiness of the dough.
  4. Pinch a portion of the dough to form a round shape.  Continue with the rest of the dough.
  5. Add sweet potato balls into the boiling water.  Add sugar to taste.  When the sweet potato balls float, they are cooked and ready to be eaten.
  6. Serve this delicious dessert warm.
