Ingredients
1 medium sized sweet potato - peeled
tapioca starch
water for kneading
3 cups water
2 tbsp quinoa
8 red dates
2 slices ginger
sugar to taste
Method
- Add 3 cups of water to a pot. Add red dates and quinoa and boil over medium heat for 10 minutes.
- Cut the sweet potato into thin slices. Steam over high heat till soft. Add 1 tbsp sugar and mashed the sweet potato. Set aside.
- When slightly cooled, add tapioca starch and water in small portions until a pliable dough is formed. More starch will add to the chewiness of the dough.
- Pinch a portion of the dough to form a round shape. Continue with the rest of the dough.
- Add sweet potato balls into the boiling water. Add sugar to taste. When the sweet potato balls float, they are cooked and ready to be eaten.
- Serve this delicious dessert warm.
