Almond Tofu (杏仁豆腐)

(makes 2 cups)
2 1/2 cups water
1/2 tbsp agar agar powder
1/2 cup evaporated milk
4 tbsp sugar
1/2 tsp almond extract

  1. Boil the water in a pot.  When boiling, add sugar and let it dissolve.
  2. Add agar agar powder, evaporated milk and almond extract.
  3. Stir to mix well.  When agar agar powder is dissolved in the mixture, pour into a glassware and let cool.
  4. Refrigerate and serve cold.
