1 white pomfret - fins trimmed, innards removed and make 2 slits on both sides of fish
1 shallot - peeled and sliced
5 cherry tomatoes - halved
1 tsp turmeric powder
sprinkle of pepper
sprinkle of salt
- Marinate the inside of the fish with seasonings for 30 minutes or more.
- Place the ginger, shallot and cherry tomatoes inside the seasoned cavity of fish.
- Place fish on a lightly greased tray in a preheated oven of 350 degrees F.
- Bake 10 minutes on one side, turn over and baked for another 5 to 10 minutes until fish is cooked and skin is crispy.
- Serve warm with rice.
