Oyster Congee




Ingredients
8 oysters from a jar - rinsed
1 egg
1 cup rice grain - washed
3 cups water
some shredded ginger
some chopped green onion
salt and pepper to taste
shallot oil

Method
  1. Boil water in a pot.  When water comes to a boil, pour in rice grain and shredded ginger and bring to a boil again.
  2. Simmer over low heat, stirring occasionally until cooked.
  3. Season with salt and pepper, stir to combine well.
  4. Break egg into pot and stir.
  5. Add in oysters and cook for another few minutes.
  6. Ladle into a serving bowl and drizzle some shallot oil.
  7. Sprinkle chopped green onion and serve warm.
