2 medium potato - peeled and cut into small cubes
1 carrot - peeled and cut into small cubes
1 small bell pepper - cut into small pcs
1 red onion - cut into small pcs
1 tbsp olive oil1 1/2 tbsp dried rosemary
3 cloves whole garlic - peeled
salt and pepper to taste
- Rub chicken with oil, rosemary, salt and pepper and marinate for 2 hours or more.
- Preheat oven to 400F. Place chicken in a baking tray. Mix all the vegetables with the remaining marinade from chicken and place in the same tray.
- Bake for 40 mins till chicken is cooked and vegetables are tender.
- Remove from oven and serve warm.
