2 sweet potatoes - peeled and cut into slices
sugar to taste
- Place the sweet potatoes in a electric mixer and blend.
- Remove and place in a bowl.
- Add egg and sugar to mix.
- Add enough flour to make a texture that is not too soft for frying.
- Heat up oil in a pan and place a dollop of mixture into the pan, slightly flattening it.
- Sprinkle some sliced almond on top.
- When the other side has browned, flip over the almond side and pan fry till browned as well.
- Serve warm.
