Cremini Mushroom Soup

1-1/2 tbsp butter
1 medium sized yellow onion -sliced
2 cups portabella mushrooms - sliced
1 small potato - peeled and sliced
1 to 2 cup chicken stock (enough qty to blend)
1/2 cup half and half
 pinch of salt and pepper
sprinkle of garlic powder

  1. Saute onion in butter until soft.
  2. Add mushrooms and saute for 1 to 2 minutes till aromatic.
  3. Add sliced potato and chicken stock and bring to a boil.
  4. Cook till potato slices are tender.
  5. Pour contents into a blender and blend.
  6. Return blended mixture to the pot.
  7. Add in half and half, salt, pepper and garlic powder.
  8. Check seasonings and stir to mix well.
  9. Serve warm with bread or toast.
