Ingredients
1-1/2 tbsp butter
1 medium sized yellow onion -sliced
2 cups portabella mushrooms - sliced
1 small potato - peeled and sliced
1 to 2 cup chicken stock (enough qty to blend)
1/2 cup half and half
pinch of salt and pepper
sprinkle of garlic powder
Method
- Saute onion in butter until soft.
- Add mushrooms and saute for 1 to 2 minutes till aromatic.
- Add sliced potato and chicken stock and bring to a boil.
- Cook till potato slices are tender.
- Pour contents into a blender and blend.
- Return blended mixture to the pot.
- Add in half and half, salt, pepper and garlic powder.
- Check seasonings and stir to mix well.
- Serve warm with bread or toast.
