Braised Pork Rib with Bittergourd in Fermented Yellow Bean Sauce


Ingredients
1 lb pork rib
1 bittergourd - remove seeds and cut into slices
2 fresh red chillies - remove seeds and sliced
2 tbsp salted fermented yellow beans
3 cloves garlic  - unpeeled and lightly smashed
2 slices ginger
1 shallot - peeled and sliced into halves
1 star anise
2 cloves 
1 tbsp soy sauce
drizzle of sesame oil
vegetable oil

 Seasonings for pork rib
1 tbsp soy sauce
1 tbsp rice wine
1 tsp sesame oil
pinch of pepper
pinch of sugar
1 tsp cornstarch

Method
  1. Marinate pork rib with seasonings for a few hours or overnight.
  2. Heat up oil in pressure cooker.  Saute ginger, garlic and shallot till aromatic.  Add fermented beans and fresh chillies and saute for a while.
  3. Add pork ribs and drizzle soy sauce and do a quick stir fry.
  4. Add water, star anise and cloves.  
  5. Cover and cook for 15 minutes and let pressure release naturally.
  6. Remove pressure cooker cover. Add bittergourd and cook for another 15 minutes using a normal cover.
  7. Drizzle sesame oil and serve warm.
