Stir Fried Potato Wedges with Oyster Sauce

3 medium-sized potato - peeled and cut into wedges
1/2 cup frozen green peas - thawed
1 shallot - sliced
2 cloves garlic - chopped
salt and pepper to taste
1/4 cup water
2 tbsp cooking oil

11/2 tbsp oyster sauce
1 tbsp dark soy sauce
1 tsp sesame oil

  1. Bring a pot of water to boil and blanch the potato for a few minutes until slightly soft.
  2. Heat up oil in a pan on medium heat.  Saute the shallot and garlic until fragrant.  Add potato to wok and stir fry under high heat.  Drizzle sauce and add water and fry to mix well.
  3. Add green peas and stir fry for another 2-3 minutes.  Sprinkle some salt and pepper to taste.
  4. Transfer to a serving plate and serve warm.
