Stir Fried Chicken with Cremini Mushroom

200g chicken breast meat - sliced
8 cremini mushrooms - sliced
2 cloves garlic - chopped
1/4 onion - sliced
1 stalk green onion - cut to 4 cm length
cornstarch solution
salt and pepper to taste
2 tbsp cooking oil

 Seasonings for chicken
1 tsp huatiao wine
1 tsp soy sauce
1 tsp sesame oil
pinch of pepper
1 tsp cornstarch
huatiao wine
oyster sauce

  1. Marinate the chicken meat for 15 mins or more.  Set aside.
  2. Heat up pan on medium heat.  Saute the mushroom for a few minutes until lightly browned and fragrant.  Remove from wok and set aside.
  3. Add oil to the pan.  Saute the onion and garlic until fragrant.  Add chicken slices and stir fry under high heat for a few minutes.  Add mushrooms to the pan and stir fry to mix well. 
  4. Add green onions and sauce and stir fry for 1 - 2 minutes.  Stir in cornstarch solution and mix well.  Sprinkle some salt and pepper to taste before transferring to a serving plate.  Serve warm.
