Serves 2 pax
1 packet Crispy Prawns with Cereal mix (use half of it)
8 large prawns
some curry leaves (i do not have them and substituted with thai basil leaves)
2 stalks chilli padi - chopped
salt and pepper to taste
1 tbsp unsalted butter
2 tbsp cooking oil
- Use a pair of scissors and make a slit on the back of the prawns and devein them. Trim the whiskers and legs but leave the shell intact. Season the prawns with some salt and pepper and set aside.
- Heat oil in a pan under medium heat and fry the prawns till just cooked. Remove prawns and set aside.
- Add in butter, heat till it almost melted. Add in basil leaves, chilli padi and cereal mix and stir fry till fragrant.
- Add in the fried prawns and toss to combine well. Transfer to a serving plate and serve immediately.
