Grilled Lemongrass Pork Chop

Ingredients
1 lb boneless pork chop
2 stalk lemongrass - use white part only - chopped finely
3 shallots- peeled and sliced
4 cloves garlic - peeled and sliced
1 1/2 tbsp fish sauce
1 1/2 tbsp soy sauce
1 tsp dark soy sauce 
2 tbsp brown sugar 
dash of black pepper
1 tbsp vegetable oil
Method
  1. Use a pair of scissors to make several small slits on the outer part of the pork chop.
  2. Using the back of a cleaver, lightly pound the pork chop.
  3. Place the pork chop into a ziplock bag.
  4. Put the lemongrass, shallot and garlic into a food processor and blend till fine.
  5. Add fish sauce, soy sauce, dark soy sauce, brown sugar, pepper and vegetable oil to the mixture and blend a while more to mix well.
  6. Pour the seasonings onto the pork chop and marinate overnight in the fridge.
  7. Preheat Weber grill on high and brush some oil onto the grate.
  8. Remove seasonings from pork chops and place them onto the grill.  Cook 3 minutes on one side and another 2 minutes on the other side.
  9. Remove from grill and let rest for 5 minutes, covering with a aluminium foil tent.
  10. Serve warm with some lentils or any green vegetables.
