Grilled Lemongrass Chicken

6 pieces chicken drumstick
2 stalk lemongrass - use white part only - chopped finely
3 shallots- peeled and sliced
3 cloves garlic - peeled and sliced
1 1/2 tbsp fish sauce
1 1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp lemon juice
1 tbsp mirin
2 tbsp brown sugar 
dash of black pepper

  1. Place the chicken drumsticks into a ziplock bag.
  2. Put the lemongrass, shallot and garlic into a food processor and blend till fine.
  3. Add fish sauce, soy sauce, dark soy sauce, lemon juice, mirin, brown sugar and pepper to the mixture and blend a while more to mix well.
  4. Pour the seasonings onto the chicken and marinate overnight in the fridge.
  5. Preheat Weber grill on high and place a trivet on the grill.
  6. Place chicken on the trivet.  Cook for about 25 to 30 minutes, turning once after 15 minutes
  7. Remove from grill and let rest for 5 minutes, covering with a aluminium foil tent.
  8. Serve warm with cucumbers.
