Burdock Root Soup (牛蒡汤)

3 pieces of pork rib - blanched
3 pieces of burdock root - peeled and cut into thick long pieces
2 carrots - cut into thick long pieces
15 chinese red dates
2 slices ginger
2 tbsp wolfberries
4 bowls of water
salt to taste


  1. Boil 4 bowls of water and pour them into a slow cooker. 
  2. Add all the ingredients and simmer for 4 hours on high heat or 6 - 8 hours on low heat.
  3. When cooked, add salt to taste and transfer to a soup bowl and serve warm with rice.
