Steamed Chicken with Mushroom and Chinese Sausage


Ingredients
1lb chicken pieces
2 pieces chinese sausage - wash and slice
1 large piece black fungus - wash, soaked and sliced 
handful of dried lily flowers - wash and trim hard ends, soaked and drained
5 dried shitake mushrooms - wash, remove stalk, soak and drain
some julienned ginger
chopped green onion

Marinade for chicken
2 tbsp soy sauce
1 tsp dark soy sauce
2 tbsp glutinous rice wine
1 tbsp oyster sauce
1 tsp sesame oil
salt and pepper to taste
1 tbsp chopped garlic
1 tsp grated ginger
1 tsp cornstarch 

Method
  1. Marinate chicken with seasonings for 1 hour or more.
  2. Place black fungus, mushroom and lily bulb flowers in a metal plate.
  3. Place chicken pieces and sliced chinese sausage on top of these ingredients.
  4. Place julienned ginger on top of the chicken pieces.
  5. Steam over medium high heat for 12 minutes.
  6. Remove from heat.  Sprinkle chopped onions over the chicken and serve warm with rice.
