Dungeness Crab Congee




Ingredients
1 Dungeness crab - scoop out the crab meat
 1 egg
1 cup of rice
5 cups of water
salt and pepper to taste
julienned ginger
chopped green onion
soy sauce to taste
drizzle of garlic oil

Soup Stock Ingredients
Crab shell
few ginger slices
2 cloves garlic
1/4 of yellow onion - peeled and sliced
Method
  1. Boil water.  Add the crab shell, onions, garlic  and ginger slices.  Cook on low heat for 20 minutes.  Use a seive and reserve the soup only.  Discard the rest of the ingredients.
  2. Add rice to boiling stock.
  3. Cook over low heat for 30 minutes.
  4. Add crab meat and julienned ginger.  Add salt and pepper to taste.  
  5. Break an egg into the congee.  Stir to combine well.
  6. Add soy sauce and garlic oil to taste.
  7. Sprinkle chopped green onion and serve warm.
