Ingredients
1 lb chicken pieces
1 bowl of pumpkin - cut into large pieces
2 tbsp thai curry paste
1 tbsp curry powder
handful of curry leaves
1/2 red onion - peeled and sliced
1 shallot - peeled and sliced
1 large tomato - cut into quarters
2 cups coconut milk
2 tbsp cooking oil
Method
- Heat up oil in pot. Fry onion over low heat. Add tomato and fry for a few minutes.
- Add curry paste and curry powder and fry over low heat till aromatic.
- Add curry leaves and chicken pieces and fry to mix well.
- Add coconut milk and bring to a boil. Cook over medium heat for 15 minutes.
- Add pumpkin and cook for 5 minutes.
- Ladle into a serving bowl and enjoy1
