Curry Chicken with Pumpkin


Ingredients
1 lb chicken pieces
1 bowl of pumpkin - cut into large pieces
2 tbsp thai curry paste
1 tbsp curry  powder 
handful of curry leaves
1/2 red onion - peeled and sliced
1 shallot - peeled and sliced
1 large tomato - cut into quarters
2 cups coconut milk
2 tbsp cooking oil
 
Method
  1. Heat up oil in pot.  Fry onion over low heat.  Add tomato and fry for a few minutes.
  2. Add curry paste and curry powder and fry over low heat till aromatic.
  3. Add curry leaves and chicken pieces and fry to mix well.
  4. Add coconut milk and bring to a boil.  Cook over medium heat for 15 minutes.
  5. Add pumpkin and cook for 5 minutes.
  6. Ladle into a serving bowl and enjoy1
