Sweet and Sour Pork Ribs




Ingredients
1 lb pork ribs
1/2 cup cubed fresh pineapple 
1 green bell pepper - remove seeds and cut into bite-sized pieces
1 small yellow onion - cut into quarters 
1 tbsp minced ginger
3 tbsp cooking oil
extra oil for frying ribs
Seasonings for ribs
1 tbsp soy sauce
1 tbsp huatiao wine
1 tsp sesame oil
pinch of salt and pepper to taste

Sweet and Sour Sauce
3 tbsp ketchup
1 tbsp oyster sauce
1 tbsp sugar
1 tbsp black vinegar
2 tbsp soy sauce
1 tsp dark soy sauce
1/2 tsp salt
2 tbsp water
1/2 tsp cornstarch solution

Method
  1. Marinate pork ribs with seasonings for a few hours.
  2. Heat up a pot of cooking oil. 
  3. Dust pork ribs with some flour and deep fry pork ribs till brown and crispy.  Set aside.
  4. Add one tbsp oil in a frying pan.  Fry garlic for a while.  Add onion and fry till aromatic. 
  5. Add bell pepper and stir fry over high heat.
  6. Add fried pork ribs and cubed pineapple into the pan. Add sweet and sour sauce.
  7. Fry to mix well.  Add a little water if it is too dry. Add cornstarch solution if necessary to thicken it.
  8. Ladle into a serving plate and serve warm.
